Seared Ahi Steak with Stir-Fried Vegetable & Cantonese Aioli
Peninsula Restaurant, Monterey
Serves 4
4 oz. mayonnaise
2 oz. brown sugar
1 oz. Dijon mustard
2 oz. soy sauce
water to thin
Procedure:
1. Mix brown sugar an Dijon mustard together, stir in mayonnaise and soy.
2. Add water as needed until desired consistency is reached.
Stir-Fried Vegetables
2 oz. broccoli florets
1 oz. carrots (cut on bias)
1 oz. red pepper (julienne)
1 oz. red onion (julienne)
2 oz. Shitake mushrooms (sliced)
1/4 oz. sesame oil
1/8 oz. walnut oil
salt & pepper to taste
Procedure:
1. Sauté vegetables in oils and season to taste.
Seared Ahi Steak
7 oz. Ahi Steak (4 each)
3 oz. steamed rice
2 oz. stir fried vegetables
2 oz. Cantonese aioli
1/2 oz. pickled ginger
1.4 tsp. black sesame seeds
1 sprig Italian parsley
Seared Ahi Steak Procedure:
1. Season Ahi with salt and pepper and sear to medium rare, cut Ahi half on an angle.
2. Place steamed rice in center of plate and lean the halves of Ahi on the rice.
2. Place the stir-fried vegetable around the plate.
3. Drizzle with Cantonese aioli.
4. Top rice with pickled ginger.
5. Garnish top with black and white sesame seeds and sprig of parsley.
