Ice Cream Sandwich With Blueberries

Rio Grill, Carmel

Serves 4

Chocolate Sauce:yields 1 quart
1/2# butter
1/4 cup brandy
3/4 cup light karo syrup
1/4 teaspoon salt
1# bittersweet chocolate

Cookie Wafer:yields 12 cookies
1/2# butter (soft)
1 cup powdered sugar (sifted)
6 egg whites
1/4 cup ground almonds
1 cups sifted flour
1/4 teaspoon vanilla extract

Chocolate Sauce
1. Melt over water with butter on bottom. Do not stir or the chocolate will become grainy.
2. Add 3 cups of cream and store.

Cookie Wafer
1. Cream sugar and butter together.
2. Add the egg whites one at a time.
3. Add the rest slowly.
4. Store. You can substitute your favorite wafer.

The Rio Grill's ice cream sandwich consists of two wafers, home-made ice cream, chocolate sauce, freshly whipped cream, candied walnuts and seasonal berries.
