Apple Tart with Vanilla Ice Cream

Serves 2

4- 4 inch circles of puff pastry (available at fine food shops)
2 Golden Delicious apples, peeled, cored, and thinly sliced
1/2 cup almond paste or 1 cup lightly roasted almonds pureed in food processor with 2 oz. sugar
1 whole egg
2 oz. cream
1 1/2 cups apple cider, reduce to 1/2 cup
4 small scoops vanilla ice cream
powdered sugar
fruit

Mix almond paste with egg and cream in a small bowl with kitchen spoon.

Lay out puff pastry circles on a baking pan with parchment paper underneath. Spread thin layer of almond mixture on top of pastry. Layer apple slices on top in symmetrical pattern. Bake in 425 degree oven approximately 12-15 minutes or until golden brown. Remove from oven, place on plate, drizzle reduced cider around the plate, garnish with ice cream, powdered sugar and fruit.
